Another year has come and gone. Another tree sits in my entry way, and more presents are under the tree. I can't believe that I have done this 56 times now. Something else that I cannot believe is that while the celebration is about family and love, and decorations, and presents... it is also about me. Christmas is about me. Christ came for me... to save me. Why? I am flawed. I've made mistakes. I am not perfect in any way. Most days I struggle. I am lucky to have a home and income. I love my family. And hope to live to enjoy a long retirement. I'll never be the President of the U.S. I won't be rich. My face will not grace the news. When I do pass, only those closest to me will mourn. Yet, I was precious enough for this tiny babe to come to earth to save. So tonight I celebrate the birth of the Christ child. The child who came to change the world, and to change me. I have to admit, there are few non-fiction books that I read, but as soon as I heard about this book by Hollywood star, Leah Remini, I bought it immediately, and I could not put it down. I read this book faster than I have read anything else in a long time. It is compelling and poignant. She talks of her treatment and escape from the Scientology cult. Second generation Scientologist, she was indoctrinated at a young age. Leah grew up in the 'church' and defended it mightily. Until she saw through the masks and the blatant manipulation. She speaks openly of the rigid rules and requirements (money and time) that the church requires. She gives heart-wrenching examples of the punishment the church inflicts on its members if they do not tow the line. She speaks of the hurt and betrayal after dedicating her entire life to what she thought was right. Ostracised by everyone and everything she held dear, Leah is no longer allowed to be in the presence of any practicing Scientologist because she has been deemed a Subversive Person. The enemy. Lower than low. She is nothing to them. But she is something to me. What an inspiration! She has openly admitted her own faults and wrongs before the 'church' could destroy her publically. Leah shows a kind of courage that is rare these days. Kuddos to her for finding the strength to stand up against this organization. Thanks to her having the strength and stamina to stand up and speak out, perhaps others can find that same strength and escape their captivity and get their lives back. I love the cake part. I do not like candied fruit. (Don't send hate mail. It's a personal preference). I like fresh fruit. I like it all year. You can't buy it all year. The ones you buy are typically dry and have been made months in advance. Yuk! So the answer? Bake my own. My family has a recipe that is called Boiled cake. Or, if you struggle in making it, we have affectionately called it 'that sh*&%^!! boiled cake'. Still, the recipe called for those petrified candied fruits. Again, yuk! So, I altered the recipe. Below is my favorite recipe. It uses raisins, fresh apples, fresh or canned pineapple, maraschino cherries, and optional walnuts. It takes a bit of time to make, but is well worth it. So, moist you will feel like it was fresh baked even days later. Warm it in the microwave and melt some butter over it. Delicious! Give it a try. 2 C raisins 1 chopped apple 2 C sugar 3/4 C shortening 2 C water dash salt Combine above ingredients and boil for 2 minutes. Add: 1 ½ tsp. each of Cinnamon, Allspice, and Nutmeg. Remove from heat and add 1 tsp baking soda. Stir well. Allow to cool. When mixture has completely cooled, add enough flour to make a medium batter (approx. 2 C) Add 2 beaten eggs, 1 C nuts, and any of the following you desire: 1 can chopped pineapple 1 large can Maraschino cherries chopped dried apricots, figs, or dates any other fresh or dried fruit you desire (I stay away from the candied stuff. It hurts my teeth and my tastebuds). Bake in a greased and floured pan at 350 degrees. Loaf pans for 45 minutes, and angel food pans for 1 hr. 15 min. Allow to cool, slice and serve warm with butter, or as is. Thanks Aunt Lola, and mom for handing this down through the years. Enjoy!
